Where did Uramaki Originate?

It is believed that Machita Ichiro developed Uramaki. He was a sushi chef in Tokyo Kaikan, a Los Angeles restaurant. It’s true: Necessity is the mother of invention. Like many other North American sushi restaurants, Tokyo Kaikan was having a hard time getting Toro. Toro, the fat belly of the tuna fish, was a staple in making sushi rolls. So, Machita Ichiro decided to try an experiment. He looked for something that had the same consistency as toro. The solution was simple: avocados. They had the same melt-in-your mouth taste and consistency as the scarce and costly Toro.

But Machita Ichiro wasn’t finished. He listened to his customers. Some of them didn’t like the taste of seaweed on the outside of their sushi rolls. So, just like a clever mother, the sushi chef buried the good-for-you stuff inside the sushi roll and put the seaweed in the middle. This new inside-out uramaki or maki roll was dubbed the California Roll.

How Does The Best Sushi Restaurant In Dubai Make An Uramaki Roll?

Making an uramaki California style sushi roll looks difficult, doesn’t it? But, sushi chefs at the best sushi restaurants make it look easy. If you were to watch them in their Japanese sushi restaurant kitchen, this is what you’d see.
  • First, they use top quality Japanese white rice. It takes about a cup of rice for each uramaki roll.
  • Next, they halve four ounces of crab legs. This makes an ounce stick for each sushi roll.
  • Then, they slice thin slivers of Japanese cucumber.
  • Just before they put the uramaki roll together, chefs peel, halve and slice an avocado.
  • The secret is in the sauce. To make it, chefs take 2 tablespoons of mayonnaise and add 2 tablespoons of diced chives or green onion. Then they stir in 2 tablespoons of flying fish roe. If you want some zing to your sauce, add a small teaspoon or less of wasabi.

  • Okay. Now for the tricky part. Using the bamboo mat, flip the nori so the rice is face down and the nori is on top. Spread a quarter of the mayonnaise on the nori. Add two half-pieces of crab end to end on one end of the nori. Lay 4 slivers of cucumber beside the crab. Next to it lay a quarter of the slices of avocado.
  • This next part takes practice. The chefs at Japanese sushi restaurants make it look easy. Using the bamboo mat, roll the nori until you have a California roll with the rice side out.
  • Cut the long roll into four shorter rolls.
  • Sprinkle with fish roe and sesame seeds if you wish.
